Leamona FCE members try flours, prepares for Neosho County Fair

Leamona FCE met on June 5, at the Reach Center. Janis Reinhardt called the meeting to order. The roll call was taken by attendees naming a place to visit in southeast Kansas. The program was “Sifting Through Flour” given by Mary Jane Burghart.

Burghart shared that many dried plants have been ground up and used for flour. Many have come from other countries. Some can be used as a one-to-one replacement for all purpose flour and others do better if blended with all purpose flour.

Burghart said it it is wise to follow replacement instructions as they may require additional water, eggs, or oil. Burghart said consumers used to only have a choice of all purpose flour and cake flour which makes items much lighter but now consumers can have a choice of over 30 varieties. She brought two kinds of cookies for members to sample. Some of the flours will make heavier breads while others give you light fluffy products, Burghart said. Everyone received a list of flour, what each flour is best used for and a few recipes.

Debbie Goodner shared plans to have a demonstration booth at the Neosho County Fair, July 24-28 to show the public the use of different flours. She also showed a presentation board that was prepared showing various flours, recipes and that samples would be available.
