Ingredients
6 tablespoons butter, cubed
1-1/2 cups packed brown sugar
2 tablespoons water
2 cups semisweet chocolate chips
2 large eggs, room temperature
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1-1/2 teaspoons baking soda
1 teaspoon salt
Filling:
2-1/2 cups confectioners’ sugar
1/4 cup butter, softened
3 tablespoons 2% milk
1/2 teaspoon peppermint extract Dash salt
3 drops green food coloring, optional Preheat oven to 350°.
In a small saucepan, combine butter, brown sugar, water and chocolate chips. Cook and stir over low heat until chips are melted; cool. Beat in eggs and vanilla.
Combine flour, baking soda and salt; gradually add to chocolate mixture.
Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake until firm, 10-12 minutes. Remove to wire racks to cool.
Filling: In a large bowl, combine confectioners’ sugar, butter, milk, extract, salt and, if desired, food coloring until smooth. Spread on the bottoms of half of the cookies; top with remaining cookies.
