2 medium cucumbers (English or regular), peeled (optional) and thinly sliced
1/2 sweet onion, thinly sliced
2 tablespoons olive oil
1 tablespoon apple cider vinegar
1 teaspoon sugar
1/2 cup water
1 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Prepare the cucumbers: Thinly slice the cucumbers and the onion. If using regular cucumbers with thick skins, you may want to peel them first.
2. Combine ingredients: In a large bowl, whisk together the olive oil, vinegar, sugar, salt, and pepper.
3. Pour dressing: Pour the dressing over the cucumbers and onions and stir to coat.
