Ingredients
3 large sweet potatoes (about 1 1/2 pounds total) 1/2 cup maple syrup 8 tablespoons (1 stick) brown butter Homemade marshmallows (optional)
Instructions
Arrange a rack in the middle of the oven and heat the oven to 350ºF. Peel and cut 3 large sweet potatoes into 1-inch thick chunks.
Place the sweet potatoes in a large pot and cover with water by about 1 inch. Bring to a low boil over medium-high heat and simmer just until they can be pierced with a fork and starting to soften.
While boiling the sweet potatoes you can make your brown butter. Cook butter while stirring over medium heat until you get brown bits in the bottom of the pan and the butter starts smelly nutty and of caramel. Remove from heat and cool slightly.
Using a slotted spoon, carefully transfer the sweet potatoes into an 8x8-inch square baking dish.
Add maple syrup to your browned butter, stir. Pour the brown butter syrup mixture over the sweet potatoes. Top with homemade marshmallows.
Bake until the sweet potatoes are fork-tender, about 30 minutes. Remove the baking dish from the oven and spoon the candied mixture evenly over the top.
Let the candied yams cool about 5 minutes so the sauce can thicken. Serve warm.
